The French Culinary Institute's Classic Culinary Arts course of study isn't limited to instruction in French cooking. It entails immersion in the traditional methods of French cooking that comprise the foundational elements of western cooking.

FCI classes offer individual attention, with an average student-to-faculty ratio of 12 to 1. The Culinary Arts curriculum includes: Introduction to Basic Techniques; Techniques, Nutrition, and Kitchen Management; Discipline: Skills for Consistency and Their Refinement; Buffet, Catering, and A la Carte Presentations; Reality: Introduction to Restaurant Service; and Confidence, Control, and Creativity in Restaurant Reality.
