FCI classes offer individual attention, with an average student-to-faculty ratio of 12 to 1. The Culinary Arts curriculum includes: Introduction to Basic Techniques; Techniques, Nutrition, and Kitchen Management; Discipline: Skills for Consistency and Their Refinement; Buffet, Catering, and A la Carte Presentations; Reality: Introduction to Restaurant Service; and Confidence, Control, and Creativity in Restaurant Reality.
