Associate's degree in Culinary Science

Working towards an Associate's degree in Culinary Science at the Culinary Institute of Virginia, students work side by side with industry professionals in kitchens supplied with state-of-the-art equipment.

Students spend two years learning culinary techniques, culinary fundamentals, front of house management, principles of baking, meat/fish fabrication, food theory, advanced table service, a la carte cooking, baking, international cooking, garde manger, and pastry arts. In addition, students take a series of management courses to instill in them knowledge and skills in areas like: nutrition, supervision, sanitation, purchasing, food costing, and wine and spirits.

The Culinary Institute of Virginia's externships give students an opportunity to acquire experience related to the real world in a mentored environment. Students will obtain practical culinary experience while they work in local restaurants, hotels, clubs, or other food service operations.
