Mac and Cheese

I saw this recipe for Macaroni and Cheese at Bon Appétit. My first thought was, “Are they mad? Mac and cheese made with penne pasta?” Then I wondered why I cared at all. (Yes, I realize the pot is calling the kettle black here.)

Sure, trade some cheddar for some brie, if you dare, but eschew the elbow noodles for penne? Are you even allowed to call it macaroni and cheese anymore if there’s no macaroni? Wouldn’t it just be penne and cheese?

But mac and cheese is more than just the sum of its parts – mac and cheese is down-home comfort food: an American institution right up there with Mom, baseball, and apple pie.

You wouldn’t be able to pry the elbow noodles from my cold, dead hands. So I suppose this foodie is really a sentimentalist at heart.

P.S. I might try the brie though.

Great..now I can’t think about anything else but mac and cheese…how am i supposed to work like this?
