Arizona Culinary Institute's Culinary Arts, Baking, and Restaurant Management diploma program starts off with a 6-week grounding in basic techniques, so that you can get a jumpstart on a new career, or advance quickly in your current one. It is important to learn these skills by not only taking classes in them, but by starting to cook in state-of-the-art kitchens as soon as possible! Further classes include Saucier and Meat Fabrication; Basic Baking; Management, Wine, and Spirits; Nutrition; Advanced Baking, Pastry, and Showpieces; Restaurant Operations; and Advanced Cuisine. The program is characterized by small classes and a comfortable setting that is further enhanced by a 12-week culinary internship. In less than a year a student can complete ACI's program and earn a diploma in Culinary Arts, Baking, and Restaurant Management.
